  • 8 ounces Goat Cheese Alternatively use Brie or mascarpone
  • 1 sheet Puff Pastry Make sure it's cold for best results
  • 1 large Egg For wash, optional but recommended
  • 1 tablespoon Fresh Thyme Optional, for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather your ingredients, lining a baking sheet with parchment paper.
  2. Roll out the cold puff pastry into a thin layer, about 1/8 inch thick on a floured surface.
  3. Spread a layer of fig preserves over the pastry, leaving a small border. Crumble goat cheese evenly over the preserves.
  4. Roll the pastry tightly from one edge into a log, then wrap in plastic wrap and chill in the freezer for 15-20 minutes.
  5. Slice the chilled log into even rounds, about 1 inch thick.
  6. Arrange the pinwheel slices on the lined baking sheet spaced about 1 inch apart. Optionally sprinkle fresh thyme on top.
  7. Beat the egg and brush the tops of the pinwheels with the egg wash for a golden finish.
  8. Bake in the preheated oven for 15-20 minutes, or until golden brown and flaky.
