Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup Doritos crushed
  • 1 cup salsa
  • 1 cup sour cream

Method
 

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in the taco seasoning and water. Simmer for about 5 minutes until thickened.
  2. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, and shredded cheddar cheese.
  3. Add the cooked taco meat to the salad mixture and gently toss to combine.
  4. Just before serving, add the crushed Doritos and drizzle with salsa and sour cream. Toss lightly to combine.
  5. Serve immediately for the best crunch.
