Step-by-Step Instructions
  1. Preheat your grill to medium-high (350°F to 400°F). Husk the corn and brush with olive oil to prevent sticking.
  2. Grill the corn for about 2 minutes on each side until charred and tender. Remove and cool.
  3. Once cool, cut the kernels off the cob and place them into a large mixing bowl.
  4. If using frozen corn, thaw and drain excess moisture, then heat in a skillet.
  5. Add red onion, garlic, jalapeño, and cotija cheese to the corn bowl. Toss gently to combine.
  6. Whisk together Greek yogurt, lime juice, chili powder, paprika, sea salt, and pepper in a separate bowl.
  7. Drizzle dressing over corn mixture and toss to coat evenly.
  8. Garnish with additional cilantro and cotija cheese. Serve immediately or chill for 30 minutes.
